- Place dates and coconut in the bowl of a food processor. Process until mixture is combined, about 1 minute. Press mixture into an 8"x 8" square baking dish that's been lined with wax or parchment paper. Refrigerate for 10 minutes.
- Remove the date "crust" from the fridge and spread with almond butter. Cut into eight servings and top each with a fan of apple slices.
- Handy Hint: To keep the date mixture from sticking to your hands when you press it into the pan, keep a dish of lukewarm water at the ready. Dip your fingers into the water occasionally to keep them clean and the date mixture from sticking.
