Homemade basil-pesto caprese salad
Fresh mozzarella, ripe tomatoes, and a homemade basil pesto come together in this classic caprese.

Salad Ingredients:

Directions
- Place basil, almonds, garlic, Parmesan cheese and olive oil in food processor
- Chop until well blended
- Taste and add salt/pepper and lemon to taste. Place in refrigerator to chill until salad is complete
- Cut mozzarella into small cubes or as desired, slice tomatoes in half
- Add mozzarella and tomatoes to medium-size bowl, then add pesto and mix together
- Scoop onto plate, drizzle oil, sprinkle Parmesan cheese and enjoy!
