Edamame Fettucine, with Spinach and Tomato

Ingredients

Directions
  1. Boil 4-6 cups of water in a medium-large pot.
  2. Add pasta, cook 8-10 minutes, check frequently for desired tenderness.
  3. As pasta is cooking, heat a large skillet on low-medium.
  4. Add oil, garlic and basil, let simmer.
  5. Once pasta is cooked, drain into colander, except for 1/4 cup of starchy water.
  6. Run cool water over pasta to stop cooking.
  7. Add starchy water to skillet, increase heat to medium.
  8. Add tomatoes, cook 2-3 minutes.
  9. Add pasta, spinach and cheese.
  10. Mix until evenly distributed and spinach slightly wilts.
  11. Turn off heat, add any additional desired spices.
