Broiled pineapple fool

The classic British fool, a dessert of fruit and whipped cream, is a perfect warm weather treat.

Ingredients

Directions
  1. Preheat oven to 350 F. Scatter macadamia nuts on foil-lined baking sheet. Bake until lightly browned and fragrant, around 12 minutes. Remove from oven to cool. Chop pineapple into bite-size pieces when cool.
  2. Preheat broiler. On foil-lined baking sheet coated with cooking spray, lay out pineapple rings. In small bowl, combine sugar and cinnamon; sprinkle ¼ teaspoon cinnamon sugar over each ring. Broil until pineapple has tinges of light brown, around 15 minutes. Remove from boiler and cool on wire rack.
  3. Pour cream into bowl of electric mixer with whip attachment; whip until cream holds soft peaks. Put yogurt in large bowl and thoroughly mix in stevia powder. Put ⅓ cup Greek yogurt-stevia mixture into whipped cream; gently fold in yogurt using rubber spatula. Fold cream-yogurt mixture into remaining stevia yogurt in two additions using rubber spatula, taking care not to over-stir and deflate the heavy cream.
  4. Carefully spoon a heaping tablespoon of yogurt mixture into the bottom of each of 4 parfait glasses. Top with layer of chopped pineapple. Continue to layer until all fruit and yogurt has been used. Top with 1 tablespoon macadamia nuts.

If it’s grilling season, you can also grill the pineapple instead of broiling it. The aim is to lightly caramelize the pineapple’s sugars and eliminate some of its excess moisture.
